Default Securing how-to?

How do you all secure your servers? Do hackers randonly choose IPs to attack? We are a small company so are we save since our server don't have much activity on the net?

Don't count on it. They just randomly scan IPs and then attack. They don't really bother if you are small or big because they will not know who you are.
To them you are just 4 sets of numbers....

But of course if your server are not online 24/7, they would have really little use for it :P They need something 24/7 to do their dirty work
