Some online backup service providers can provide what is called a 'mail-folder level' backup. It will let you navigate your Exchange server during the source selection and simply select the mailboxes that you want to backup. You can even exclude folders within a users account.
This makes it very easy to retrieve just a single mail item that has been deleted too.
There is a massive downside though. A mail-folder level backup cannot be used to rebuild a server from scratch. Emails can only be recovered to the original server or an image of it. Even if you create an identically set up Active Directory and Exchange installation on a new server, it will not be able to restore your data to it.
